Crispy Potato Wedges are a great side dish for any meal. Fancy enough for the holidays and easy enough for every day. Packed with flavor and delicious!

Ingredients
- 4 pounds Russet potatoes
- ¼ cup butter melted
- ¼ cup olive oil
- 3 tablespoons Dijon mustard
- 2 teaspoons salt
- 1 teaspoon pepper
- 3 tablespoons rosemary freshly chopped, see note
Instructions
- Preheat oven to 400ºF.
- Wash potatoes thoroughly. Cut into wedges.
- Combine the remaining ingredients and toss with potatoes to coat.
- Place potatoes on a lined baking sheet, leaving plenty of room between them so they can roast. I usually use 2 baking sheets for 4 pounds of potatoes.
- Bake potatoes until golden brown and fork-tender, about 45 minutes.
