How to Make Spaghetti Aglio E Olio!

How to Make Spaghetti Aglio E Olio details preparing spaghetti noodles tossed with garlic sautéed in olive oil and a touch of red pepper flakes, creating a simple pasta dish coated in a flavorful garlic oil. Parmesan cheese may be added as a finishing touch.

Description

This recipe guides through cooking fresh spaghetti noodles until nearly done or packaged noodles to al dente. Garlic is finely minced and gently fried in olive oil until soft and golden brown, then red pepper flakes are added briefly to infuse spice and aroma. Cooked spaghetti is drained with reserved pasta water and combined with the garlic oil mixture in a skillet. The reserved pasta water is added to form a creamy coating on the noodles as it reduces, allowing the flavors to meld.

The dish is finished with an extra drizzle of good olive oil and optional Parmesan cheese. The result is a simple yet flavorful pasta with a balanced garlic taste, subtle heat from the pepper flakes, and a silky texture from the emulsified sauce.

This classic Italian preparation relies on quality ingredients and careful timing to avoid burnt garlic, ensuring the garlic imparts a rich aroma without bitterness. The dish is quick to prepare and serves as a minimalist yet satisfying meal.

Ingredients

Servings
  • 1 pound spaghetti noodles fresh
  • ½ cup olive oil with more for drizzling later, good
  • ¼ cup garlic finely minced, fresh
  • ½ teaspoon red pepper flakes if wanted, crushed
  • Parmesan Cheese for topping if wanted

Instructions

  1. Bring a large pot of salted water to a boil. Cook the noodles for 5-6 minutes until almost entirely cooked. If you are using packaged noodles, cook to al dente according to instructions.
  2. While the pasta is cooking, add the olive oil & garlic to a large skillet. Fry until the garlic is a soft golden brown. Add in the red pepper flakes and fry for another minute.
  3. Drain the noodles (reserving 1 cup of the pasta liquid to the side) and add to the pan. Pour the reserved liquid over the top.
  4. Simmer the noodles, tossing and turning, until the liquid has been reduced and you get a creamy type coating on the pasta.
  5. Drizzle a bit of fresh olive oil onto the pasta right before serving and top with Parmesan.
  6. Enjoy!
