Ingredients
- 3 Medium sized sweet potatoes
- 1-2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper

Instructions
- Preheat oven to 425°F and bring 3 cups of water to a boil.
- Wash and peel sweet potatoes. Make sure to remove any dark spots or strings. You can leave the skin on if you prefer.
- Gently place sweet potatoes in the boiling water. Boil for 8 minutes. Then, remove and drain water.
- Carefully slice the potatoes into ½” thick sticks/fries.
- Line sheet pan with parchment paper or tin foil and place fries on sheet pan.
- Spray or drizzle olive oil, salt and pepper on fries. Toss to coat.
- Bake for 25 minutes, flipping half way through. For extra crisp fries, broil at 500°F for 3-6 minutes or until sweet potato fries start to crisp.
- Serve hot and enjoy!
Notes
- Boiling the potatoes makes them easier to cut, and later, easier to digest.
- You can keep the potato skin on if you prefer.
- There is really no wrong way to season these! Feel free to add any other seasonings you like, such as ranch, garlic & herb, paprika, or Old Bay to name a few.
