How to Make The BEST Fried Rice
Description
The fried rice starts by cooking diced ham with garlic and green onions in oil to develop savory depth and aroma. Peas and carrots are added for color and sweetness, then set aside. The rice is cooked in the same pan with additional oils, spread out to crisp slightly before stirring, resulting in a slightly crunchy texture on coated grains.
Soy sauce seasons the rice which is then combined with the ham and vegetable mixture, folding together the components gently over low heat. Eggs are cooked separately with butter and added at the end, stirring quickly to create ribbons of scrambled egg throughout the rice.
This fried rice can be topped with Sriracha or Sambal Olek for heat, or toasted sesame seeds for extra nuttiness and crunch. Using cold, cooked rice is essential to achieving the desired texture, and dividing the cooking in stages improves flavor layering. It makes a versatile dish for leftover rice and can be customized by switching up vegetables or protein.
Ingredients
- 3 tablespoons canola oil , divided
- 2 tablespoons sesame oil divided, toasted
- 8 green onions , trimmed and thinly sliced
- 2-3 garlic about 2 tablespoons garlic), minced, cloves
- 5 ounces ham diced (about 2 cups, thickly sliced
- 1 cup pea defrosted, frozen
- 1 cup carrot defrosted, frozen
- 4 cups white rice cold, cooked
- 3 tablespoons soy sauce
- 1 tablespoon butter
- 4 egg
Instructions
- Heat 1 tablespoon of the canola oil and 1 tablespoon of the sesame oil in a large skillet over medium-high. Once the oil is hot, add half of the green onions and garlic, stirring to coat. Sauté, stirring occasionally, for 2-3 minutes. Add the chopped ham and cook for 2-3 more minutes or until warmed through. Add the peas and carrots and sauté for another minute or so. Transfer the ham and veggies to a plate or bowl and set aside.
- In the same skillet over medium-high heat, add the remaining 2 tablespoons of canola oil and 1 tablespoon of sesame oil. Once the oil is hot, add the rice to the skillet and toss to coat. Spread the rice in an even layer, pressing down with a spatula to flatten. Cook without stirring for 3-4 minutes. Stir and repeat this process about two more times, or until the rice is crisp and golden brown. Add the soy sauce, the ham and veggie mixture, and stir to combine. Reduce heat to low.
- Meanwhile, in a separate non-stick skillet, melt the butter over medium-high heat. While the butter melts, whisk the eggs in a bowl, then add to the skillet. Cook the eggs while stirring until soft curds form, then remove from heat and add to the fried rice. Taste for seasoning and add more soy sauce or sesame oil if desired. Top with the rest of the green onions and serve.
