  • 2 Russet potatoes sliced into fry-shaped pieces (skin on or off)
  • 3 tablespoons extra-virgin olive oil
  • salt and pepper to taste

Instructions

  1. Line two baking sheets with parchment paper, and preheat oven to 425.
  2. Place the potatoes in a bowl and add olive oil (3 tablespoons), salt, pepper, and any other seasonings you want. Stir to coat well in the oil and seasoning.
  3. Spread potatoes out evenly on the baking sheets so they aren't touching.
  4. Roast in oven for 15-20 minutes, or until golden brown on the outside.
