How To Make Vegan Mushroom Carnitas

This Mushroom Carnitas recipe is made with king oyster mushrooms and topped with the best creamy cilantro sauce (ready in 45 minutes)!

Mushroom Carnitas

  • 2 lbs king oyster mushrooms 900 g
  • 4 Tbsp olive oil 60 mL
  • 2 Tbsp Worcestershire sauce 30 mL, vegan
  • 2 tsp garlic powder
  • 2 tsp ground coriander seed
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp black pepper ground
  • ½ cup orange juice 120 mL
  • 1 Tbsp lime juice 15 mL

Cilantro Sauce (optional)

  • ½ cup cilantro fresh
  • ¼ cup yogurt 60 g, plain, Greek
  • 2 Tbsp red wine vinegar 30 mL
  • 2 Tbsp olive oil 30 mL
  • 1 tsp mustard 5 g
  • 1 clove garlic
  • ¼ tsp smoked paprika
  • ¼ tsp cumin
  • ¼ tsp black pepper

Assembly

  • flour tortilla or corn tortilla
  • cilantro
  • jalapeño
  • white onion
  • Pickled red onion

Instructions

  1. Shred Mushrooms: Clean mushrooms with a damp paper towel. Using two forks, shred the stems and caps roughly into pieces.
  2. Marinate: In a large bowl, toss shredded mushrooms with all Mushroom Carnitas ingredients except for the lime juice. Let mushrooms marinate while oven preheats to 400°F (204°C).
  3. Bake: Spread mushrooms into a single layer on a parchment-lined baking sheet. Bake for 20 minutes, then use a spatula to flip over all the mushrooms. Return them to the oven for 10 to 20 minutes, or until crispy and brown. (Cook time will depend on how thick or thin your mushroom shreds are.) When finished cooking, drizzle Mushroom Carnitas with lime juice.
  4. Sauce (optional): Meanwhile, add all Cilantro Sauce ingredients to a blender and blitz until smooth.
  5. Assemble: Spoon mushrooms into tortillas, topping with the Cilantro Sauce and your favorite fixings.
