Ingredients

  • 2 cups rice noodles long
  • 2 cups water

Instructions

  1. Cover the pot with a lid. Place the pot on medium heat and bring it to a boil.
  2. Once boiling, reduce the heat to low. Let it simmer for about 10–15 minutes. Avoid opening the lid too often.
  3. After most of the water is absorbed, check if the rice is cooked by tasting a small portion. If it’s still a bit firm, sprinkle a little more water, cover, and cook for another 2–3 minutes.
  4. Turn off the heat and let the rice sit, covered, for 5–10 minutes. This step allows the steam to finish cooking the rice.
  5. Use cup or any container for measuring. Add the desired amount of rice to a pot.
  6. Rinse the rice 2–3 times with cold water, swirling it gently with your fingers, to remove excess starch. Drain the water after each rinse until the water is clear.
  7. Pour water into the pot. Place your fingertip so it touches the surface of the rice, then add water until it reaches the first joint of your index finger (roughly 1 inch). This is a classic Filipino way to measure water, no matter how much rice you're cooking.

Notes

Take note to adjust the amount of water next time. So you will not have to add more while cooking.
