How to Prepare Shrimp for Chinese Cooking

This method for preparing shrimp for Chinese cooking uses a brief cure in a mixture of sugar, salt, and baking soda followed by soaking in iced water. The process firms the shrimp texture and enhances taste, resulting in shrimp that hold up well in stir-fries or other Chinese dishes.

Description

The recipe explains massaging peeled and deveined shrimp with sugar, salt, and baking soda, then soaking them in a mixture of ice water and ice cubes for 1 to 2 hours or overnight. This treatment firms the shrimp flesh by altering protein structure and balances flavors.

Before cooking, rinsing and draining the shrimp removes excess curing agents, preventing oversalting. This preparation step is typical in Chinese cooking to improve texture for stir-frying or boiling applications.
