How to Roast Garlic

This recipe explains how to roast whole garlic bulbs to bring out their sweet, mellow flavor and soft texture. The method involves trimming the garlic heads, drizzling with extra virgin olive oil, and roasting them covered for about 45 minutes. Roasted garlic becomes creamy and spreadable, excellent for adding richness to dishes or as a flavorful condiment.

Description

Roasting garlic softens the cloves and transforms their sharp raw taste into a tender, sweet, and fragrant paste. The recipe instructs to peel the outer skins off the bulbs, trim the tops to expose cloves, drizzle generously with olive oil, and roast at 400°F (about 200°C) covered to avoid drying out. This process results in cloves that easily squeeze from their skins or can be mashed into spreads, sauces, or dressings.

The roasted garlic's texture is soft and buttery, and the flavor is mellow compared to raw garlic, making it useful for mellowing a wide range of savory dishes. It can be spread on bread, blended into mashed potatoes, or added to soups for depth of flavor.

The recipe also advises methods for storing roasted garlic safely, including refrigeration submerged in oil for up to two weeks and freezing individual cloves. Proper storage helps maintain quality and prevents health risks.

Ingredients

Servings
  • 12 garlic garlic bulbs, heads
  • extra virgin olive oil Private Reserve Greek brand

Instructions

  1. Preheat oven to 400°F.
  2. Prepare the garlic heads for roasting. Peel the outer papery skins, but leave cloves intact. Slice the tops of the garlic heads off (about 1/4 to 1/2 inch from top), leaving the cloves exposed.  Make sure all of the cloves have some portion exposed so that they properly roast.
  3. Place each garlic head (exposed garlic surface up) in muffin pan. Drizzle about 2 tsp over each head of garlic, and using your hand, massage oil all over the exposed garlic surface.
  4. Cover muffin pan with another muffin pan that is identical in size. Roast in heated oven for 40-45 minutes. Remove from oven and let cool before handling.
  5. When cool enough, push garlic cloves out of their casings and use or store for later. See notes for storage options.

Notes

  • Freeze roasted garlic cloves individually on a sheet pan before transferring to containers for easy portioning.
  • Store roasted garlic in the refrigerator submerged in olive oil within a sealed jar for up to 2 weeks; do not leave at room temperature to avoid botulism risk.
  • Thaw frozen garlic cloves briefly at room temperature before using.
