How to save an overcooked turkey
Description
To save an overcooked turkey breast, slice the meat and arrange it in a roasting dish, drizzling melted butter and broth over it to rehydrate and add richness. The dish is tightly covered with foil to trap moisture and heated in a low oven at 200ºF (90ºC) for 15 minutes. This slow warming method helps the meat regain some tenderness without further drying.
For serving, slices are arranged on a platter and topped with gravy that has been thinned with additional broth to improve pourability and penetration into the meat. Including the leg meat can provide a contrast in texture since it is typically cooked properly. Keeping the leg meat warm in a separate foil-sealed dish with broth in the oven ensures a cohesive serving temperature.
This approach addresses common issues with overcooked poultry by adding moisture and warmth cautiously, aiming to improve palatability without altering the original flavor profile drastically.

Notes
- Extra large turkeys may require more broth, about an additional ½ cup, to ensure sufficient moisture.
- Leg meat is usually not overcooked and can be warmed separately by covering with broth and foil in the oven alongside the breast slices.
- Use low oven temperature to gently warm the turkey without further drying it out.
