Description

This Hummingbird Bread begins by mixing flour with baking soda, cinnamon, and salt. Separately, softened butter is creamed with sugar and brown sugar until fluffy, then eggs and vanilla extract are incorporated. The dry ingredients are gradually mixed in, creating a thick, crumbly batter. Crushed pineapple with juice, shredded coconut, chopped pecans, and mashed bananas are folded in to add moisture, texture, and tropical sweetness.

Baked in two loaf pans at 350°F for 35-40 minutes, the bread develops a golden crust while remaining soft inside. Once cooled, it is frosted with a blend of softened butter, cream cheese, powdered sugar, vanilla, and cinnamon mixed until fluffy. Bread:

  • 1/2 C butter softened, unsalted, sweet cream
  • 3/4 C sugar
  • 1/4 C brown sugar packed
  • 2 large egg
  • 2 1/2 C flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 C banana mashed
  • 1 tsp vanilla extract pure
  • 1 tsp cinnamon
  • 1 8 oz pineapple with juice, crushed, canned
  • 1 C coconut sweetened shredded
  • 1/3 C pecans chopped

Icing:

  • 1/2 C butter softened, unsalted, sweet cream
  • 1 8 oz cream cheese softened
  • 1 C powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3/4 C pecans chopped

Instructions

Bread:

  1. Preheat your oven to 350 degrees and grease two 8x4 loaf pans with pam spray
  2. In a large mixing bowl, combine the flour, baking soda, cinnamon and salt and whisk until combined
  3. Using a standing mixer, cream the butter and sugars until creamy and fluffy
  4. Mix in the eggs and vanilla
  5. Gradually mix in the dry ingredients and mix until combined. Batter will start to look really dry and crumbly
  6. Add in the pineapple, coconut and pecans and mix until combined
  7. Add in the mashed bananas
  8. Pour batter into loaf pans and bake for 35-40 minutes or until a toothpick or a knife comes out clean
  9. Let sit on a wire rack to cool completely

Icing:

  1. Using a standing mixer, combine all ingredients except the pecans and mix until smooth and fluffy
  2. Using a rubber spatula, scoop some of the cream cheese frosting onto a cooled loaf and frost
  3. Sprinkle with some chopped pecans
  4. Enjoy!
