Hummus Stuffed Peppers

Stuffed peppers with a twist! Make a few of these hummus stuffed peppers as a nutritious after school snack or whip up a whole tray to feed a crowd!

Ingredients
- ¼ cup hummus
- 5 sweet mini peppers
- 1 TBSP minced red onion
- 1-2 TBSP chopped grape tomatoes
- 1 TBSP crumbled Feta cheese

Instructions
- Slice the top off of each pepper and discard, or leave the top on for a handy dandy pepper handle.
- Next slice each pepper lengthwise.
- Top with hummus and sprinkle on all your favorite toppings.
- Dig in!

- Feeling feisty? Top with a drizzle of your favorite olive oil or balsamic!
- Feeling fiery? Try them with hot sauce or Sriracha!
- Garnish with fresh chopped parsley as an optional topping.
