Description
These Ice Cream Bon Bons start by scooping solidly frozen ice cream into small balls placed on parchment or wax paper. The balls are kept frozen, ideally overnight, to firm up. Semi-sweet chocolate chips are melted gently over simmering water with vegetable oil added for smoothness. Working in small batches while the chocolate is still melted but cooled, each ice cream ball held on a toothpick is coated by spooning the chocolate over it. Immediately after coating, sugar crystals are sprinkled on the surface before the chocolate hardens.
Once coated, bon bons are returned to the freezer for at least two hours to set the chocolate shell fully. The contrast between cold creamy ice cream and crisp chocolate offers a pleasing texture and flavor experience. Variations in decoration can include colored sprinkles or chopped nuts as alternatives to sugar crystals.
Using firm, well-frozen ice cream from homemade batches or high-quality store brands is key to easier shaping and minimizing melting during coating. Letting the chocolate cool somewhat after melting reduces the chance of melting the ice cream on contact. Keeping the balls frozen throughout the process improves success.
Ingredients
- 1.5 quart Ice cream your favorite flavor
- ½ - 1 cup semi sweet chocolate chips
- 1-2 tsp vegetable oil
- sugar crystals for decoration
Instructions
- Before starting, make sure ice cream is solidly frozen. Using firmly frozen ice cream, scoop ice cream into small balls and place onto parchment or wax lined plate. Put plate back in freezer here and there are you work, especially if your ice cream starts getting a bit soft.
- Insert toothpick into each ice cream ball. Leave all ice cream balls in freezer to firm up well overnight.
- Melt chocolate and oil in a bowl over saucepan of simmering water, not allowing bowl to touch water. Stir until melted and smooth. Remove from heat and let cool off a bit, so it's still melted but not hot.
- Working quickly and with small batches at a time, hold each ice cream ball by toothpick and spoon melted chocolate all around it. Set bon bon down on parchment/wax lined plate and remove toothpick.
- Quickly sprinkle sugar crystals over top before chocolate firms up. Repeat in batches until all bon bons are complete. Freeze for at least 2 hours before serving.

- Use high-quality or homemade ice cream frozen solid before shaping to form firm balls easily.
- Allow melted chocolate to cool slightly before dipping to prevent melting the ice cream.
