Ice Cream Sandwich Cake
Description
This dessert uses unfrozen ice cream sandwiches arranged in alternating layers on a platter, with chocolate and caramel syrup drizzled between each layer. The sandwiches are stacked four high, alternating directions, to form the cake shape. Cold Cool Whip is spread over the stacked sandwiches to create a creamy topping, and more caramel and chocolate syrups are drizzled over the top and sides.
The cake combines the soft yet firm texture of ice cream sandwiches with the sticky sweetness of the syrups and the light airy Cool Whip topping. Freezing the assembled cake for at least two hours firms the layers so it can be sliced. The quick assembly and freezing prevent excessive melting.
This recipe can be adjusted in size by varying the number of ice cream sandwiches used, making it suitable for different occasions. If the layers start to melt during assembly, briefly return the cake to the freezer. The cake should be served frozen or very cold to maintain its form and texture.

- 12 ice cream sandwich

Instructions
- Remove the wrappers from all the ice cream sandwiches. You need to move fast because ice cream melts. ;)
- Lay 3 ice cream sandwiches side by side on a cake platter.
- Drizzle with the caramel and the chocolate.
- Lay another 3 ice cream sandwiches on top going the the other direction.
- Drizzle with more caramel and chocolate.
- Do this 2 more times so it is four high.
- If the ice cream sandwiches are melting, then place in the freezer for 30 minutes to an hour.
- "Ice" the cake with cool whip.
- Then drizzle the caramel and the chocolate on top allowing it to drip down the sides.
- Freeze for at least 2 hours before cutting and serving.
Notes
- The size of the cake can be adjusted by using more or fewer ice cream sandwiches to fit any occasion.
- If ice cream sandwiches start melting during assembly, place the cake in the freezer for 30 minutes to an hour to firm up before continuing.
