Ice Cream Sandwich Cake
Description
The Ice Cream Sandwich Cake assembles layers of softened vanilla ice cream sandwiches laid out on parchment, alternated with thick layers of Cool Whip and whole Oreo cookies. Repeating this pattern three times builds a layered dessert with contrasting creamy and crunchy textures. The final layer is a generous amount of Cool Whip finished with crushed Oreo cookie crumbs for added crunch and visual appeal.
This dessert remains frozen overnight to firm up the layers and meld flavors. The ice cream sandwiches provide a sweet vanilla ice cream center with chocolate cookie edges, while Cool Whip lends a light, airy texture. Whole Oreos add extra chocolate and creamy filling in each bite. It’s served frozen, with slicing aided by warming the knife between cuts.
Because it’s prepared without baking, it requires planning to soften the ice cream sandwiches before assembly and letting the shaped dessert freeze solid overnight. This dessert holds its form when frozen and should be served promptly after slicing to avoid melting and runniness.
Using an offset spatula to spread Cool Whip makes layering easier, and crushing Oreos in a ziplock bag with a rolling pin helps achieve an even topping.
Ingredients
- 6 vanilla ice cream sandwich
- 12 Oreo cookies
- 16 ounces Cool Whip 453 grams
- 2 Oreo cookies crushed
Instructions
- Lay out a layer of parchment paper. You may place inside a cake pan if helpful.
- Set 2 ice cream sandwiches on the parchment.
- Spread on a thick layer of cool whip, and then place 6 oreo cookies on top. Finish with another layer of cool whip.
- Repeat the process two more times, finishing with a thicker layer of cool whip.
- Garnish with crushed oreo cookies.
- Place in the freezer overnight, then remove, slice, and serve.
Notes
- Let ice cream sandwiches soften slightly before assembling to help press layers into shape.
- Run a knife under hot water and dry it before each cut to slice the frozen cake cleanly.
- Avoid letting the cake sit at room temperature for more than 15 minutes to prevent melting.
- Thaw Cool Whip in the refrigerator overnight prior to use; avoid thawing at room temperature to prevent runniness.
- Use an offset spatula to spread Cool Whip layers smoothly.
- To crush Oreo cookies, place them in a ziplock bag and roll over with a rolling pin.
