Icebox Cake

Icebox Cake assembles layers of graham crackers or cookies with a creamy pudding and whipped topping mixture interspersed with fresh berries. Chilled for hours, the dessert softens the crackers and melds berry freshness with the creamy filling for a lightly sweet treat.

Description

This recipe starts by beating cream cheese with instant pudding mixes until smooth, then gradually adding cold milk to form a thick pudding base. Cool Whip or whipped cream is folded in to lighten the mixture. A thin layer of whipped topping is spread on the pan bottom to help secure the first cookie layer.

Graham crackers or Oreos form the cake layers, interrupted by spreads of the pudding cream and fresh berries like strawberries, blueberries, or raspberries. The layering is repeated until the pan is full. The assembled cake is refrigerated at least four hours or overnight, during which time the crackers soften to cake-like texture and the flavors blend.

This no-bake dessert provides a balance of creamy, sweet, and fruity flavors alongside tender, soft cookie layers. It is easy to prepare in advance and chilled until serving, suitable for casual gatherings or seasonal occasions.

  • 20 oz graham crackers plain or chocolate, or use Oreos
  • 8 oz cream cheese softened to room temperature
  • 2 (3.4 oz) vanilla instant pudding or Cheesecake or Strawberry Instant Pudding, packages
  • 2 1/2 cups milk cold
  • 16 oz Cool Whip or the same amount of homemade whipped cream
  • 3 cups strawberry sliced, fresh
  • 1 cup blueberries or blackberries, fresh
  • 1 cup raspberries fresh
  • 4 oz white chocolate chips

Instructions

  1. In a large bowl, using an electric mixer, beat cream cheese, and dry pudding mixes until combined.
  2. Gradually, with the mixer on low, pour in the milk and whisk until fully blended.
  3. Gently, using a rubber spatula, fold in Cool Whip, reserving 1 cup.
  4. Spread a thin layer of cool whip on the bottom of a 9x13 baking pan.
  5. Layer 5 graham crackers across the center of the pan, then 2 more, breaking them as needed to fit around the top and bottom edges. Or cover the bottom of the pan with Oreos, if used instead of graham crackers.
  6. Spread a layer of the pudding mixture over the cookies and top with a layer of berries and sliced strawberries.
  7. Place another graham cracker layer on top of the berries, lightly press it down with your hands, then add a layer of the pudding mixture, then a layer of berries again.
  8. Repeat the graham-pudding-berries layers 1 more time, you should reach the top of the pan.
  9. Refrigerate for at least 4 hours or better overnight until the cookies have softened completely.
  10. When ready to serve, melt the white chocolate chips in a bowl and drizzle over the top. Slice and serve.
