Iced Lunch Lady Brownies
Description
The brownie base is made by melting semi-sweet chocolate and butter together, then mixing in granulated and brown sugars, eggs, vanilla, and a blend of flour, cocoa powder, and salt. This creates a thick batter that bakes into a moist, dense brownie with a rich chocolate flavor.
After baking and cooling, a chocolate icing made from butter, milk, cocoa powder, powdered sugar, and vanilla is whipped until fluffy and spread evenly over the brownies. The contrast of fudgy cake and creamy frosting gives the brownies a satisfying texture combination.
This recipe yields 12 brownies, making it convenient for sharing or portioning. The brownies are ideal for those who enjoy a chocolate treat with a luscious icing layer.
Chocolate chips can be substituted for chopped chocolate by weight without altering the recipe significantly.
Ingredients
Brownies
- 4 ounces semi-sweet chocolate chopped, bar form
- ¾ cup butter cut into chunks, unsalted
- 1 cup granulated sugar
- ¾ cup brown sugar
- 3 egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- ¼ cup cocoa powder unsweetened
- ½ teaspoon salt
Icing
- ¼ cup milk
- 2 tablespoons milk
- ½ cup butter at room temperature, unsalted
- 5 tablespoons cocoa powder unsweetened
- 1 pound powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees F. Grease the inside of a 9-inch x-13inch baking dish and set aside.
- Melt chocolate & butter together in a microwave-safe bowl for 30 seconds at a time, stirring between each heating. (Or you can use a double boiler on the stovetop.)
- Transfer chocolate mixture to a large mixing bowl. Beat in sugar and brown sugar,
- Add eggs and vanilla to the bowl and mix until combined. Scrape the side of the bowl as needed.
- Mix flour, cocoa powder, and salt in another mixing bowl. Add dry ingredients to wet ingredients and mix until just combined.
- Pour batter into your prepared baking dish and bake for 35-40 mins.
- Remove brownies from the oven. Cool in the dish on a wire rack until room temperature.
- Mix together icing ingredients until smooth and fluffy. Spread over brownies in an even layer. Let rest until icing sets, and then cut into 12 brownies.
Notes
- Chocolate chips can replace the chocolate bar when measured by weight to maintain texture.
- Let brownies cool fully before icing to prevent melting the frosting.
- Cut into 12 squares for consistent serving sizes.
