Description

This curry begins by frying whole spices—including bay leaves, cloves, and black peppercorns—with chopped onions in vegetable oil over medium heat. The lamb pieces are then added along with minced garlic and ginger and a blend of ground spices such as cardamom, cinnamon, turmeric, coriander, garam masala, and kosher salt. This combination creates a fragrant base as the lamb browns and absorbs the spices.

Water and tomato puree are introduced to provide moisture and body, and the curry simmers gently for 45 minutes, allowing the lamb to become tender and the flavors to meld. Just before serving, Greek yogurt is stirred in to add creaminess and a subtle tang, balancing the spices.

  • 1/4 cup vegetable oil
  • 2 bay leaf
  • 4 clove whole
  • 10 black peppercorns
  • 2 onion chopped, yellow
  • 2 pounds lamb cut into 1 pieces, boneless
  • 1 tablespoon ginger minced
  • 1 tablespoon garlic minced
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon Turmeric
  • 2 teaspoons Coriander
  • 2 teaspoons garam masala
  • 2 cups water
  • 1/2 cup tomato puree
  • 1/2 cup Greek yogurt
  • cilantro for garnish (optional)

Instructions

  1. To a large skillet or dutch oven add the oil on medium heat with the bay leaves, cloves, peppercorns and onions and cook, stirring, for 8-10 minutes.
  2. Add in the lamb, ginger, garlic, cardamom, cinnamon, salt, turmeric, coriander and garam masala cooking and stirring for an additional 8-10 minutes.
  3. Add in the water and tomato puree and let simmer on medium-low heat for 45 minutes, adding in the yogurt just before serving.
