Indian Raita combines plain yogurt with aromatic cumin powder and salt, enhanced by finely chopped red onion and seeded green chili pepper. This mix creates a refreshing, tangy condiment with a slight sharpness from the onions and a gentle heat from the chili. The dish is garnished with fresh cilantro, adding bright herbal notes. It is served chilled, making it a soothing complement to spicy or richly flavored dishes.
The preparation involves simple chopping and mixing, requiring no cooking, which preserves the freshness of ingredients and the cooling effect of yogurt. While cucumbers are often included in raita varieties, this version omits them for allergy reasons but can be adapted to include cucumber if desired. Using plain yogurt allows a smooth, creamy base; if Greek yogurt is used, diluting it with water adjusts the consistency.
Ingredients
- 1 red onion medium
- 1 green chili pepper de-seeded, Thai or Serrano
- 1 teaspoon cumin powder
- 1 teaspoon salt adjust to taste
- ¼ cup cilantro finely chopped
- 3 cups PLAIN yogurt see note for Greek yogurt
Instructions
- Chop onions and green chili peppers finely. Add this along with cumin powder and salt and mix well to combine.
- Garnish with chopped cilantro and serve chilled!
Notes
- You may add one peeled and diced cucumber to the raita if you are not allergic, for a traditional touch.
- To use Greek yogurt, dilute 3 cups of it with about 1/3 cup of water to achieve a suitable raita consistency.
- This raita is best served chilled for a refreshing contrast to hot dishes.
