  • 1 acorn squash
  • 1 tbsp olive oil
  • salt
  • black pepper

Instructions

  1. Cut the acorn squash in half, from stem to bottom.
  2. Scoop out the inside of the acorn squash.
  3. Put a steamer basket or the trivet into the Instant Pot.
  4. Add in one cup of water to the Instant Pot.
  5. Drizzle olive oil, salt, and pepper onto the acorn squash before placing them into the Instant Pot.
  6. Close the lid, set the valve to seal, and set the pot on Manual for 5 minutes. Quick release when done!
  7. Serve as is when ready or stuff with your choice of stuffing.
  8. Optional: broil in the oven for 4-5 minutes

Notes

  • More than one acorn squash can be cooked in the Instant Pot without adjusting cooking time.
  • For a sweeter flavor, add butter and maple syrup to the cut side and brush over the squash before broiling 4-5 minutes.
