Description
This recipe starts by seasoning pork rib racks with salt and powders for garlic and onion, providing a baseline savory flavor without ingredients excluded by the AIP diet. The ribs are arranged on an Instant Pot rack above apple cider vinegar used as cooking liquid, which tenderizes the meat during pressure cooking for 25 minutes, followed by a natural release and quick release technique.
After pressure cooking, the ribs are coated generously with AIP Classic BBQ Sauce and placed under the oven broiler for 5 to 10 minutes until the sauce bubbles and darkens slightly. This final step adds glaze and intensified flavor while creating a pleasant texture contrast between the tender ribs and sauced exterior.
This dish pairs well with additional AIP-compliant sides and is ready to serve immediately. To apply sauce, it can be spooned and spread with the back of the spoon instead of a brush. Larger Instant Pots may require additional liquid to maintain appropriate pressure. Removing the film membrane from ribs can improve flavor but is optional and requires skill.
Ingredients
- 1 pound pork ribs rack
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1/2 cup apple cider vinegar
- 1 cup BBQ sauce about 1/2 the recipe, AIP classic
Instructions
- Place the ribs on a baking sheet and pat dry. Sprinkle the salt, garlic powder, and onion powder over both sides of the ribs and then set aside.
- Place the rack in the instant pot along with the apple cider vinegar. Then place the ribs on top of the rack, wrapped around the pot.
- Cook the ribs on pressure cook for 25 minutes. Once it’s finished cooking, wait 10 minutes then switch then switch to venting (quick release).
- Preheat the oven broiler. Once the red stopper has dropped on the top of the instant pot, then remove the top.
- Place the ribs, meat side up on a baking sheet. Brush with the AIP Classic BBQ Sauce.
- Place in the broiler for about 5-10 minutes or until the ribs are bubbling and the sauce is dark.
- Serve immediately with additional AIP Classic BBQ sauce.
Notes
- If available, use an Instant Pot rack to keep ribs above the liquid while cooking.
- Applying BBQ sauce can be done by spooning and spreading with the back of a spoon; a brush is optional.
- For larger Instant Pots, add an extra 1/2 cup water along with apple cider vinegar to ensure enough liquid.
- Removing the membrane film from ribs can enhance flavor but may be difficult and is not required.
