Instant Pot Apple Butter uses peeled and quartered apples cooked under pressure with spices like cinnamon, allspice, nutmeg, and a touch of salt. The pressure cooking softens the fruit quickly. After blending to a smooth sauce, the mixture is thickened using the sauté function, concentrating its flavor and color. Optional sweeteners such as brown sugar or molasses can be added to adjust sweetness and depth.

Description

Instant Pot Apple Butter features a base of quartered apples cooked with whole cinnamon sticks, freshly ground allspice and nutmeg, along with a pinch of fine sea salt. The apples can be peeled or unpeeled, using a preferred variety. Pressure cooking at high pressure for five minutes followed by a natural release softens the fruit fully.

After cooking, the apples and spices are blended into a smooth applesauce. Sweeteners like molasses, honey, or brown sugar are added to balance tartness according to taste. The mixture is then reduced using the Instant Pot's Saute Less function, stirring occasionally until achieving a thick, spreadable consistency with a rich color, which may take from 30 minutes to 1.5 hours.

This apple butter is ideal for spreading on bread or biscuits, adding to recipes, or gifting. The spices give a warm aromatic flavor characteristic of fall preserves. The use of the Instant Pot significantly shortens cooking time compared to traditional stovetop methods.

The apple butter will thicken further once chilled, a normal part of its setting process. The recipe allows optional addition of vanilla extract to enhance aroma. It's important to monitor the thickening process closely to prevent burning during sautéing.

  • 5 pounds (2335g) apple quartered & cored (peeled or unpeeled, favorite variety, e.g. Organic Gala
  • 2 (9g) cinnamon stick
  • ¼ cup (63ml) water
  • ½ teaspoon allspice freshly ground, whole
  • ½ teaspoon (1g) nutmeg
  • ½ teaspoon vanilla extract (Optional)
  • teaspoon fine sea salt or table salt
  • Optional: brown sugar or honey, maple syrup, or molasses; to taste

Instructions

  1. Pressure Cook Apples: Place ⅛ tsp fine sea salt, ½ tsp allspice, ½ (1g) teaspoon nutmeg, 2 (9g) cinnamon sticks, ¼ cup (60 ml) water and 5 lbs (2.34 kg) quartered apples in the pressure cooker. Close the lid and pressure cook at High Pressure for 5 minutes, then 20 minutes Natural Release. Open the lid carefully.
  2. Blend & Sweeten: Remove the two cinnamon stick and blend the applesauce mixture into desired consistency with an immersion blender. Taste the applesauce mixture and add in fancy molasses or other sweetener for more sweetness (for reference, we added ¼ cup (63ml) fancy molasses). Please adjust accordingly.

Make Apple Butter (Choose One Method):

  1. Method One - Saute Less: Use Saute Less function (Instant Pot: Press Cancel and Click sauté button once and click on adjust button twice to get to the Saute Less Function) to thicken the applesauce mixture until desired consistency & color. Roughly 30 minutes - 1 ½ hour. Stir occasionally. The applesauce mixture will splatter, so use a splatter guard, be very careful and wear a silicone mitt.
  2. Method Two - Slow Cook More: Use the Slow Cook More function with the lid off (Instant Pot: Press Cancel and Click Slow Cook button once and click on adjust button to get to the Slow Cook More Function) to thicken the applesauce mixture until desired consistency & color. Roughly 4 - 8 hours.

Notes

  • Apple butter thickens more as it cools in the refrigerator; expect it to firm up after chilling.
