Ingredients
- 2.5 kg Shin Of Beef
- 1 Tbsp extra virgin olive oil
- 1 medium red onion
- 1 Tbsp Chopped Frozen Garlic
- 240 ml red wine
- 480 ml Instant Pot Beef Stock
- 1 Tbsp worcester sauce
- 1 Tbsp tomato puree
- 1 Tbsp mixed herbs
- 1 Tsp thyme
- salt & pepper

Instructions
- Peel and dice your onion, load into the instant pot with your extra virgin olive oil. Sauté until your onion has started to soften. Then stir in frozen chopped garlic.
- Season the shin with salt and pepper then add the shin and brown on all sides. Cancel the sauté.
- Put the shin to one side and then deglaze the instant pot using the stock and the wine.
- Add the beef back in and season it well with all the remaining seasonings. Make sure the beef is submerged into the stock and then place the lid on the instant pot.
- Set the valve to sealing and pressure cook for an hour followed by a 15 minute natural pressure release. Remove the beef shin from the instant pot, allow it to rest for 10 minutes.
- Once the beef shin has rested, you can slice and serve.
Notes
- Liquid. Its essential to deglaze as otherwise the instant pot will struggle to go to pressure.
