Instant Pot Leftover Pot Roast Soup. How to make a delicious beef soup from leftover pot roast in the instant pot pressure cooker. Loaded with favourite pot roast ingredients, this is fantastic for using up leftovers and ideal for freezing for later.

Pot Roast Soup Ingredients:
- 400 g Leftover Pot Roast Meat
- 400 ml beef stock
- 600 ml Leftover Beef Gravy
- 4 large carrots
- 4 medium potatoes
- 1 Tbsp oregano
- 2 Tsp onion powder
- 2 Tsp garlic powder
- salt & pepper
Instructions
- Check how much pot roast you have left and peel and dice any carrots or potatoes that you need. Also cube your leftover pot roast.
- Put your leftover beef stock through a sieve to get rid of any excess fat and add it to your leftover beef gravy.
- Load into the instant pot your leftover beef, the stock, the gravy, the carrots, and the potatoes. Season with oregano, garlic powder, onion powder and salt and pepper. Stir. Place the lid on the instant pot and set to sealing. Cook for 5 minutes on manual pressure.
- When the instant pot beeps, manually release pressure. Take about 15% of the soup to the blender and blend until smooth. Stir into the soup and it will make it creamy and not give it a stew feel. Load into soup bowls and serve with homemade bread.
Notes
- Stew. If you would rather make leftover beef stew than soup, then don’t blend and add in some frozen peas instead.
