Instant Pot Beef Tips and Gravy

Instant Pot Beef Tips and Gravy features cubed stew beef cooked with onions, mushrooms, Italian seasoning, Worcestershire sauce, and beef stock in a pressure cooker to develop tender meat and rich flavors. The dish is finished by thickening the cooking liquid with a cornstarch slurry into a smooth gravy. It can be served over mashed potatoes, cauliflower rice, or biscuits, providing a warm and hearty meal with a tender meat texture and savory sauce.

Description

This recipe begins by sautéing chopped onions in olive oil using the sauté function of the Instant Pot until translucent. Cubed stew meat is then seared in the pot to develop a browned surface that enhances flavor. Beef stock, Italian seasoning, Worcestershire sauce, and sliced mushrooms are added before sealing the Instant Pot lid and cooking under high pressure for 35 minutes, which softens the meat significantly and infuses it with savory notes from the seasonings and sauce.

After pressure cooking, the liquid is thickened by stirring in a slurry of cornstarch and water while returning the pot to sauté mode, resulting in a smooth and glossy gravy. The tender beef and mushrooms soaked in the flavorful gravy offer a hearty, comforting texture and taste.

The beef tips and gravy pair well with Instant Pot mashed potatoes, mashed cauliflower, rice, or biscuits, making it a versatile main course. The dish can also be adapted by adding mushroom soup before cooking or using a steam rack to simultaneously prepare mashed potatoes. This recipe is suitable for freezer meals and can be refrigerated in airtight containers for up to two days.

  • 1 ½ cups beef stock
  • 2 teaspoons Italian seasoning
  • 3 tablespoons Worcestershire sauce
  • 1 cup mushrooms sliced, 100 g
  • 3 tablespoons cornstarch

Instructions

  1. Set the Instant Pot on the sauté setting. Heat the olive oil and add the onion, cook until translucent, around 4 minutes. Add the stew meat and sear on all sides.
  2. Pour stock, Italian seasoning, Worcestershire sauce and mushrooms. Close the lid, turn the valve to sealing, and set on high pressure for 35 minutes.
  3. When done, perform a QPR to manually release steam. Open the lid and set to sauté again.
  4. In a small bowl, combine cornstarch and water. Add the slurry to the Instant Pot and cook, stirring, until the sauce has thickened.
