Instant Pot Black Beans
Description
Instant Pot Black Beans combine dried black beans with diced onion and bell pepper, which are sautéed first to build flavor. Garlic, bay leaves, cumin, oregano, and kosher salt are then added before cooking everything under pressure with water or broth. This cooking method softens the beans within 35 minutes, producing beans tender enough to eat as is or use in various recipes.
The seasoning offers mild warmth from cumin, herbal notes from oregano, and the bell pepper adds a subtle sweetness. The cooking liquid becomes a thin broth that can be adjusted by adding more water for a soupier consistency.
Serve these black beans as a side dish or pair them with rice, tacos, or salads.
For a soupier version, increase the water amount to 5 cups prior to pressure cooking to create more broth around the beans.
Ingredients
- 1 pound black beans dried
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 1 green bell pepper or anaheim or jalapeno, diced
- 2 bay leaf
- 2 teaspoons garlic about 4 cloves, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon cumin ground
- 1/2 teaspoon oregano dried
- 3 1/2 cups water (or chicken or vegetable broth)

Instructions
- Rinse and drain black beans. Discard and beans that are cracked or split in half, as well as any rocks or debris.
- Press the saute button on the Instant Pot and add the olive oil. When hot, add the onions and bell pepper. Cook for 5 minutes, stirring occasionally, until onions become translucent.
- Add the bay leaves, garlic, salt, cumin and oregano. Cook for 30 seconds, stirring continuously.
- Add the water and rinsed black beans. Stir everything together to combine.
- Cover with lid, seal the pressure valve and cook on high pressure for 35 minutes.
- When the timer goes off, let the pressure release naturally for 20 minutes, then carefully open the pressure valve to manually release any remaining pressure.
- Discard the bay leaves and serve immediately with chopped cilantro for garnish.
Notes
- Discard any beans that are cracked or split before rinsing to ensure even cooking.
- Use additional water (about 5 cups) if you want a soupier black bean dish with more broth.
