Instant Pot Brown Rice & Veggies Recipe Ingredients:

  • 1 Cup brown rice
  • 1.25 Cups vegetable stock
  • ½ celery stick
  • 2 carrot medium
  • 1 leek medium
  • 400 g mixed peppers
  • 2 Tsp extra virgin olive oil
  • 1 Tbsp garam masala
  • 2 Tsp Turmeric
  • 1 Tbsp Coriander
  • 1 Tsp cumin
  • salt
  • black pepper

Instructions

  1. Peel, clean and dice your vegetables. Load them into the instant pot pressure cooker along with extra virgin olive oil. Turn on sauté.
  2. Sauté your vegetables for 2-3 minutes or until they are slightly crispy.
  3. Add in seasonings and stock and mix well.
  4. Cancel sauté.
  5. Rinse and drain your brown rice, load into the instant pot and stir.
  6. Place the lid on the instant pot, set the valve to sealing and cook for 17 minutes on manual pressure cook.
  7. Complete 5 minutes of natural pressure release before releasing the rest of the pressure.
  8. Fluff up the pilaf with a fork and serve.

Notes

  • You can use any vegetable that doesn’t have a mushy texture when overcooked. The easiest option is frozen sweetcorn and frozen peas, but you can mix and match. What we did was use vegetables that we found from the bottom of the fridge that needed using up.
  • I recommend this brand for healthy bone broth and soup based stocks to use in the instant pot. They are much healthier, but best of all they make your food taste so much better and give a much better pressure cooker flavour.
