Instant Pot Cajun Chicken Pasta Recipe
Description
The recipe uses an Instant Pot to speed up cooking. Chicken breasts are combined with heavy cream, chicken broth, butter, garlic powder, and Cajun seasoning and cooked on high pressure for 17 minutes. After a quick release, the chicken is removed and shredded or diced into chunks.
The remaining sauce is whisked before returning the chicken and adding uncooked penne pasta. Sealed and cooked again for 3 minutes at high pressure, the pasta finishes cooking in the sauce. Parmesan cheese is stirred in off heat, melting into a smooth, cheesy coating without overcooking.
Served warm, this dish offers rich, creamy comfort with a moderate heat from Cajun seasoning. Reducing the seasoning amount is advised for sensitivity to spice. Leftovers can be refrigerated for up to 5 days, and quick pressure release after pasta cook time helps prevent soggy texture.
Ingredients
- 2 pounds chicken breast
- 2 cups heavy whipping cream
- 4 cups chicken broth
- 4 Tablespoons butter
- 1 Tablespoons Cajun seasoning
- 1/2 teaspoon garlic powder
- 1 pound penne pasta (uncooked)
- 8 oz Parmesan Cheese grated
Instructions
- Add the chicken, heavy whipping cream, chicken broth, butter, garlic powder and cajun seasoning into at least a 6 quart instant pot.
- Seal and cook on high pressure for 17 minutes with a quick release and make sure that the chicken is cooked through (has an internal temperature of 165 degrees F).
- Remove the chicken from the instant pot and shred or dice it into large pieces.
- Whisk the sauce in the instant pot. Return the chicken back to the crock pot and stir in the uncooked pasta.
- Seal and cook on high pressure for 3 minutes with a quick release.
- Then stir in the parmesan cheese. Allow the heat from the meal to melt the parmesan cheese (do not turn the instant pot back on).
- Serve warm and enjoy.
Notes
- For less spicy results, halve the amount of Cajun seasoning.
- Store leftovers in an airtight container in the refrigerator for up to five days.
- Quickly release pressure after cooking pasta to avoid overcooking and sogginess.
