Ingredients

For cake:

  • 1 box spice cake mix plus ingredients to prepare mix (eggs, oil, water)
  • ½ cup orange juice or pineapple juice from crushed pineapple
  • 1 ¼ cup carrot shredded
  • 2 ounces pineapple drained, crushed
  • ½ cup raisins optional
  • ½ cup pecans chopped

For frosting

  • ½ cup butter room temperature
  • 8 ounces cream cheese room temperature
  • 1 teaspoon vanilla
  • 3 cups powdered sugar

Notes

  • Use your favorite box cake brand- I like Duncan Hines Super Moist Spice Cake Mix. 
  • Cake should keep for 7 days if refrigerated.
