Instant Pot Cheeseburger Pasta / Homemade Hamburger Helper

This recipe combines ground beef, shallots, garlic, carrots, mushrooms, diced tomatoes, and elbow macaroni into a creamy pasta dish cooked together in an Instant Pot. The inclusion of spinach, peas, and sharp cheddar cheese creates a hearty texture and savory flavor reminiscent of a classic cheeseburger in pasta form. Cooking the pasta directly in the broth and tomato mix allows the flavors to meld while the cheese melts in at the end for a rich finish.

Description

Instant Pot Cheeseburger Pasta blends ground beef sautéed with aromatics like shallots and garlic, along with diced carrot and mushrooms for added depth. After browning, canned diced tomatoes, beef broth, and dry elbow macaroni are layered without stirring and cooked under high pressure, resulting in tender pasta absorbing the savory cooking liquids. Frozen peas and fresh spinach added after pressure cooking lend a pop of color and freshness, while sharp cheddar cheese stirred in melts into a creamy sauce, delivering a comforting texture and a balanced mix of meaty and cheesy flavors.

The one-pot method simplifies cleanup and speeds preparation while providing a filling dinner option. The pasta is tender but not mushy, and the combination of vegetables adds nutritional interest and texture contrast. Chili flakes can be added for heat if desired, giving the dish a mild spicy kick.

This dish works well served as a main meal for weeknights or casual gatherings, pairing well with a simple green salad to lighten the richness. Leftovers reheat easily, making it convenient for future meals.

  1. On sauté mode on your Instant Pot, lightly brown your beef before adding the shallots, garlic, carrot, mushroom, and salt/pepper to taste.
  2. Add in your can of deiced tomatoes with its liquid and 2 cups of beef broth. Give it a good stir before adding your dry pasta on top. Do not mix. Gently pat down the pasta to make sure your pasta is touching the liquid. Add half a cup of water on top if needed.

  5. Serve with chili flakes on top if you're looking for some heat.
