Instant Pot Chicken Fajitas Recipe

Report
Instant Pot Chicken Fajitas feature boneless skinless chicken breast cooked quickly with salsa, chicken broth, and taco seasoning, then combined with sliced bell peppers for a flavorful filling served on warm flour tortillas. The pressure cooking infuses the chicken with seasoning and keeps the meat moist, while the peppers retain some texture by adding them after the initial cook. This recipe offers a filling, saucy fajita option that can be plated or wrapped, suitable for casual meals with customizable toppings.

Description

The recipe begins by placing sliced chicken breast in the Instant Pot along with salsa, chicken broth, and taco seasoning, which create a moist, flavorful cooking environment. After pressure cooking the chicken for 20 minutes, a quick pressure release is done. Then sliced bell peppers are added and cooked under pressure for an additional two minutes to soften slightly without overcooking.

The final mixture is stirred to combine the chicken and peppers with the seasoned sauce, creating a saucy, tender fajita filling. Serving it on warm flour tortillas allows assembling handheld fajitas that can be dressed with preferred toppings such as cheese, sour cream, or guacamole.

The method emphasizes layering flavors through pressure cooking and preserving pepper texture by adding them later in the process. This dish balances savory, mildly spicy notes from the seasoning and salsa with a tender chicken texture.
