Instant Pot Chicken Parmesan Meatballs are tender chicken meatballs infused with garlic, onion, cilantro, and Parmesan, browned in the pot then cooked in marinara sauce until juicy. The cheese topping melts richly on serving, and these meatballs pair well with hot spaghetti or other pasta for a hearty meal.

Description

This recipe blends ground chicken with minced garlic and onion, fresh cilantro, grated Parmesan, an egg, and breadcrumbs to form well-combined meatballs that hold together when cooked. Rolling the meatballs lightly in breadcrumbs before cooking helps prevent sticking and provides a slight crust.

Using the Instant Pot sauté function, the meatballs are browned in batches to develop a flavorful crust on all sides, ensuring improved texture and taste. After browning, the meatballs are returned to the pot with marinara sauce, where they simmer under pressure to absorb sauce flavors and remain moist.

The dish is finished with a sprinkle of Parmesan and mozzarella cheese and fresh cilantro garnish. Serving the meatballs over hot spaghetti allows the sauce to mingle with pasta, making a classic-style meal that is convenient to prepare thanks to the Instant Pot method.

Servings

Meatballs -

  • 1 lb ground chicken
  • 1 white onion
  • 2 white bread crust removed or ¼ cup bread crumbs, sliced
  • 1 egg large
  • ¼ cup cilantro chopped, fresh
  • 3 cloves garlic minced
  • ¼ cup Parmesan Cheese grated
  • salt to taste
  • black pepper to taste
  • 2 tablespoon olive oil

Cooking meatballs –

  • 1 white onion finely chopped
  • 3 cloves garlic finely chopped
  • 1 ½ cup marinara sauce
  • salt if needed, as per taste
  • black pepper if needed, as per taste
  • ¼ cup Parmigiano-Reggiano cheese or parmesan, grated
  • ¼ cup mozzarella cheese grated

To garnish –

  • cilantro leaves freshly chopped
  • Parmigiano-Reggiano or parmesan

To serve-

  • spaghetti hot

Instructions

  1. Combine meatball ingredients in a bowl. Using hand mix it up well until all ingredients are combined well. Scoop out equal portions of meatball mix and place on aluminium lined tray.
  2. Using your hands roll each portion into ball.
  3. Pro-Tip : After shaping balls, lightly roll the balls in bread crumbs. This will help meatballs from sticking to the pot.
  4. Oil instant pot and select SAUTE option. Will until instant pot turns on and the inner pot becomes slightly warm.
  5. Place meatballs into the pot in one single layer. If required fry meatballs in batches.
  6. Pro-Tip : DO not crowd the pot and make sure meatballs aren’t touching each other.
  7. After a minute turn meatballs over and fry. We want to brown chicken parmesan meat balls on all sides.
  8. Remove browned meatballs onto a plate.
  9. Pour marinara sauce into the pot.
  10. Pro-Tip : scrape down any brown bits of chicken pieces that might be stuck to the pot.
  11. Add back chicken meatballs.
  12. Add seasoning.
  13. Scoop the sauce over the over chicken meatballs.
  14. Cover lid and cook for 5 minutes.
  15. Once cooking time is done, allow 10 minutes natural pressure release and then quick release all the pressure by turning pressure knob to VENTING position. Turn off pot.
  16. Sprinkle grated mozzarella and Parmesan cheese. Cover with glass lid for 5 minutes until cheese melts.
  17. Scoop out over cooked spaghetti.
  18. Garnish with chopped cilantro and grated  Parmesan cheese.
  19. Serve hot, immediately.
