Description
This recipe places fresh or frozen boneless skinless chicken breasts into the Instant Pot along with salsa, taco seasoning, and chicken broth. The ingredients are pressure cooked for 15-20 minutes depending on whether the chicken is fresh or frozen, ensuring thorough cooking and flavor infusion.
After releasing the pressure, the chicken is shredded with forks and then returned to the pot and sautéed to reduce excess liquid, intensifying the flavors and achieving a desirable texture for tacos.
The shredded chicken can be served on taco shells or tortillas with toppings such as cheese, salsa, sour cream, or avocado. This method allows for quick preparation of seasoned taco meat without long marination or slow cooking.
Leftover chicken mixture keeps well in an airtight container refrigerated for up to five days, making it suitable for multiple meal uses or meal prep.
Ingredients
- 3 chicken breast fresh or frozen, boneless skinless
- 1 cup salsa
- 2 Tablespoons taco seasoning
- 1/2 cup chicken broth
Instructions
- Place chicken (frozen) in the instant pot.
- Cover with chicken broth, salsa, and taco seasoning.
- Place the lid on and make sure the knob is set to sealing position on the lid.
- Click the manual button and turn it to 15 minutes (20 minutes if you are using frozen chicken breasts).
- After the cook time, release the pressure from the instant pot by moving the knob on the lib to the venting position from the sealing position.
- Remove the chicken from the instant pot and shred with 2 forks.
- Return to the instant pot and stir. Then switch the instant pot to the sauté setting and cook off the additional liquid in the instant pot.
- Serve the chicken on your favorite taco shells or tortillas. Top with your favorite taco toppings. Enjoy!

- Store leftover shredded chicken in an airtight container in the refrigerator and consume within 5 days for best freshness.
