Instant Pot Chicken Wings Three Ways + Keto

This recipe prepares chicken wings cooked in an Instant Pot, divided into three portions and tossed with three distinctive keto-friendly sauces: buffalo, lemon pepper, and garlic parmesan. The method involves pressure cooking wings with garlic and ginger for tenderness, then finishing with flavorful butter-based sauces and seasonings. The wings develop moist meat inside with a choice of bold, tangy, or savory finishes suitable for keto diets.

Description

The wings are first seasoned with salt, garlic, and ginger and placed on a trivet inside the Instant Pot with water for steaming under pressure. This cooking method results in tender and juicy chicken. After pressure cooking with natural and quick releases, the wings are removed and divided evenly into three portions.

Each portion is then coated with a different sauce. The buffalo sauce blends hot sauce, melted butter, smoked paprika, garlic powder, and optional red pepper flakes for a spicy, buttery spread. The lemon pepper sauce mixes lemon pepper seasoning, garlic powder, melted butter, salt, and baking soda, which aids in crisping. The garlic parmesan sauce combines grated Parmesan, salt, garlic powder, butter, black pepper, and chopped parsley for a rich and herbaceous finish.

For ease, the wings can be broiled or cooked with the sauce in the Instant Pot for fewer dishes, though broiling adds a crisp texture. The recipe notes include tips for dividing cooking times, serving sizes, and ways to save time when preparing a single flavor.

INSTANT POT KETO CHICKEN WINGS

  1. Combine the chicken wings withsalt, garlic, and ginger. Add water to the Instant Pot then set the trivet inplace and lay the chicken wings on top of the trivet. Close the lid, makingsure to set it to seal and pressure cook for 8 minutes.
  2. While the chicken wings arecooking, proceed on to prepare the baking tray and rack. Line a baking traywith foil paper then lay the baking rack on top of it.
  3. Once the cooking time is over, allow the Instant Pot to Naturally Pressure Release (NPR) for at least 5minutes, before doing a Quick Pressure Release (QPR).
  4. When the pressure is completely gone, open the lid of the Instant Pot and use a pair of tongs to remove the chicken wings from the Instant Pot. Divide the chicken wings into 3 equal portions (you can use medium-size dishes for that so you can toss the chicken wings with the sauces to combine).
  5. Make each of the three Ketosauces as per the recipe instructions then combine with each of the chickenwings portions. Transfer them to the previously prepared baking rack, makingsure to space them out. If desired, set aside some sauce for the next step andas a dipping sauce.
  6. Open the oven and place the rack about 4-6 inches from the heat source of the broiler. Broil each side for 3-5 minutes. You can spoon again some of the sauce on top of the chicken wings, before turning.

BUFFALO CHICKEN WINGS

  1. Combine the hot sauce, butter, paprika powder, red pepper flakes (optional), garlic powder, and saltin a small to medium pot and place over medium heat. Allow to a simmer whilestirring with a whisk. As soon as it begins to bubble, remove from heat, stir, and set aside.
  2. Combine a third of the chicken wings with the buffalo sauce then lay then on a rack to broil (together with the other two portions). Broil each side for about 3-5 minutes, or until the desired level of crisp and brown is achieved then serve. Use any leftover sauce as a dipping sauce.

LEMON PEPPER WINGS

  1. Add the lemon pepper, garlic powder, salt, baking soda, and melted butter to a small to medium bowl.Use a whisk to combine then set aside for use.
  2. Add another third of the chicken wings to the bowl with the lemon pepper seasoning spice mix. Toss to combine then lay them on the baking rack to broil (together with the other two portions). Broil for 3-5 minutes until nicely browned and crispy looking. Remove from the oven then serve.

GARLIC PARMESAN

  1. In a small to medium bowl, combine Parmesan, salt, garlic seasoning powder, chopped parsley, and blackpepper. Stir in the melted butter then use a whisk to combine. Stir in the final third of the chicken wings and toss to combine.
  2. Transfer the chicken wings to the baking rack and broil on each side for 3-5 minutes (together with the other two portions). You can brush some of the sauce on top in between turning. Once properly browned, remove from the oven then serve.

Notes

  • Nutritional info provided applies to one-third of the wings (lemon pepper portion only).
  • Instant Pot cooking time excludes pressure build and release times.
  • If short on time, cook wings in Instant Pot, then divide and drizzle sauce before broiling 5 minutes per side for crispness.
  • Cooking all wings with one sauce in the Instant Pot reduces dishes but may trigger burn notices; stir and continue cooking as needed.
