Instant Pot Chinese Fried Rice
Description
This recipe starts by sautéing diced onion in olive oil using the Instant Pot's sauté function. Garlic and ginger purees are added and cooked briefly to develop aroma. Brown rice and vegetable stock are then added along with diced carrots and frozen peas. After stirring, the lid is secured for pressure cooking at high pressure for 18 minutes, followed by a natural release.
Once cooking is complete, the rice is fluffed with a fork, revealing tender grains cooked through but retaining slight bite typical of brown rice. Black pepper and oyster sauce add seasoning and umami depth. The sauté step before pressure cooking helps layer flavor and soften aromatics.
This one-pot method streamlines traditional fried rice cooking by eliminating separate frying steps. The dish pairs well as a side or main dish, flexible to varied sauces. Using garlic and ginger purées simplifies prep without losing character.
