Instant Pot Cilantro Lime Chicken layers boneless, skinless chicken breasts over a blend of salsa, taco seasoning, lime juice and zest, chicken broth, and black beans. The pressure cooking method quickly breaks down the chicken fibers, making it tender enough to shred with forks. After cooking, fresh chopped cilantro is stirred in to add a bright herbal note that complements the citrus and southwest-inspired spices.

Ingredients
- 16 oz salsa
- 2 tablespoon taco seasoning May also use 1 store bought package
- 1 lime juiced and zested
- 1/4 cup chicken broth
- 15 oz black beans canned, drained and rinsed
- 2 lbs chicken breast boneless, skinless
- 1 cup cilantro fresh, chopped
- tortilla toppings of choice, if using
- tostada shell toppings of choice, if using
Instructions
- In your Instant Pot, add the salsa, taco seasoning, lime juice/zest, chicken broth, and black beans.
- Stir to combine and place the chicken breasts on top of mixture.
- Close lid and set to manual, high pressure, 15 minutes. Be sure valve at top is in sealing position.
- Once timer beeps, allow a natural pressure release for 10 minutes.
- After the ten minutes, do a quick release to ensure all remaining pressure is gone and open lid.
- Shred the chicken breasts using two forks, then stir in the cilantro.
- Serve as desired and enjoy!!
Notes
- To prepare using a slow cooker, combine all ingredients except cilantro and cook on low for 6-8 hours or high for 4 hours.
- Stir in chopped cilantro just before serving to keep its fresh flavor.
