Instant Pot Cilantro Lime Rice
Description
Instant Pot Cilantro Lime Rice combines long grain white rice with fresh citrus juices and cilantro for a flavorful side dish. The rice is pressure cooked with bay leaves to infuse subtle aromatics, then naturally releases pressure to finish cooking gently. After fluffing, the rice is seasoned with olive oil, lime and lemon juices, orange juice, lime zest, and minced cilantro, which provide brightness and freshness.
The method produces rice grains that are tender and separate, enhanced by the zesty citrus blend and herbal undertones from the cilantro. It’s a refreshing complement to various entrees, especially grilled or spiced proteins.
The recipe also offers stovetop instructions using broth for added flavor instead of water. It can be doubled without adjusting cooking times. The notes recommend using long grain white rice, as cooking times may differ with other varieties.
Ingredients
- 2 cups long grain white rice
- 2 cups water see note 1
- 2 dried bay leaf
- 1 1/2 tsp kosher salt
- 2 tsp olive oil
- 2 Tbsp lime juice fresh
- 2 tsp lemon juice fresh
- 2 - 3 tsp orange juice not bottled OJ, fresh
- zest of lime 1 - 2
- 1/4 - 1/3 cup cilantro fresh, minced
Instructions
Pressure cook
- Add rice to Instant Pot insert, then pour in water and top with bay leaves.
- Secure lid, and select “Pressure Cook” or “Manual” and hit the +/- buttons until you select 3 minutes (high pressure).
Natural pressure release
- Once pressure cooking time has elapsed, don’t do anything and let the pot naturally release the pressure for 10 minutes, then turn the knob to release any remaining pressure.
Fluff and season
- Fluff rice with a fork, then stir in oil, lime juice, lemon juice, orange juice, lime zest and cilantro.
- Taste, and adjust seasonings and add more juice/zest/cilantro if desired.
Notes
- Try substituting water with equal parts reduced sodium chicken or vegetable broth for extra flavor when cooking stovetop.
- This recipe can be doubled and the cooking times remain unchanged.
- The recipe has only been tested with long grain white rice; other rice types may require adjustments.
- When cooking stovetop, simmer covered on low for about 20 minutes or according to rice package instructions before fluffing.
