Description
Instant Pot Coconut Lime Rice combines rinsed basmati rice with coconut milk and water or stock, seasoned lightly with salt and enriched with butter and lime zest before pressure cooking. The high-pressure setting cooks the rice evenly and quickly while infusing it with the coconut and citrus flavors. After a natural pressure release and fluffing, fresh cilantro and lime juice are stirred in to add herbaceous notes and acidity.
The rice comes out tender but separate, carrying the tropical sweetness of coconut balanced by the lime's tartness and the fresh scent of cilantro. This preparation pairs well with a variety of dishes where a mildly flavored yet aromatic rice side is desired.
Ingredients
- 2 cup basmati rice
- 398 ml coconut milk full fat (1 can)
- ¼ cup water or stock (chicken or vegetable)
- 1 lime juiced and zested
- 1 tbsp butter unsalted
- 1 pinch salt
- 1 bunch cilantro chopped
Instructions
- Rinse and drain rice in cold tap water.
- In an Instant Pot, combine the coconut milk, water, lime zest, salt, and butter.
- Add the rinsed rice into the Instant Pot. Do not mix the rice in, simply gently pat the rice down if needed.
- Close and seal the lid, press manual and set the Instant Pot for 6 minutes (high pressure). Once done, let it Natural Pressure Release for 8 minutes before Quick Releasing.
- Fluff the rice, add the cilantro, and lime juice. Mix to combine.
