- 7 cups (1750ml) water cold
- 1 talk green onion , finely chopped
Ground Beef Marinade
- ⅓ teaspoon salt fine sea salt
- ¼ teaspoon sesame oil
- ⅓ teaspoon ground white pepper
Instructions
- Marinate Ground Beef: In a mixing bowl, marinate ⅔ lb (300g) ground beef with ⅓ tsp fine sea salt, ¼ tsp sesame oil, and ⅓ tsp white pepper for 20 minutes.
- Pressure Cook Beef Congee: Add ¾ cup (173g) of Jasmine rice, marinated ground beef, and 7 cups (1750ml) cold water in the pressure cooker. Close the lid and pressure cook at High Pressure for 25 minutes + Full Natural Release (~18 minutes). Open the lid carefully.
- Thicken Beef Congee: The congee will look watery at this point. Add in 2oz (65g) of roughly chopped spinach. Heat up the pressure cooker (Instant Pot: press Sauté button), stir until desired thickness & consistency. Season with salt.
