Instant Pot Honey Garlic Chicken

Instant Pot Honey Garlic Chicken is made by simmering boneless, skinless chicken thighs in a mixture of soy sauce, ketchup, honey, and minced garlic. The chicken cooks quickly under high pressure, absorbing the sweet and savory sauce. The cooking liquid is thickened with a cornstarch slurry to coat the chicken, creating a glossy, flavorful finish, typically served over rice and garnished with fresh basil.

Description

This recipe combines a simple sauce of soy sauce, ketchup, honey, and garlic in an Instant Pot. Chicken thighs are added and cooked under high pressure for nine minutes, which tenderizes the meat while allowing it to soak in the honey-garlic glaze. After pressure cooking, the chicken is removed, and the remaining sauce is boiled and thickened with a cornstarch and water slurry to produce a rich, sticky coating.

The thickened sauce is returned to the chicken, thoroughly coating each piece with a shiny, flavorful glaze. Fresh basil sprinkled on top adds herbal brightness. The dish is traditionally served over cooked rice, which soaks up the flavorful sauce, making this a hearty and satisfying dish with balanced sweet and savory notes from the sauce ingredients.

Ingredients

Servings
  • 1/2 cup soy sauce low sodium
  • 1/2 cup ketchup
  • 1/2 cup honey
  • 3 cloves garlic minced
  • 3 pounds chicken thigh trimmed, boneless, skinless
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • basil shredded, for topping, fresh
  • rice for serving, cooked

Instructions

  1. Combine the soy sauce, ketchup, honey and garlic in your pressure cooker.  Add the chicken and stir to coat.  Lock the lid in place and select high pressure for 9 minutes.
  2. When the cook time ends, turn off the pressure cooker. Use the quick pressure release. When the valve drops, carefully remove the lid.
  3. Remove the chicken to a plate, keeping the liquid in the pot. Select simmer/saute and bring the liquid to a boil.
  4. In a small bowl, whisk together the cornstarch and the water. Whisk the slurry into the liquid and continue to cook until the liquid thickens. Once it has reached your desired thickness, add the chicken back to the pot and carefully stir to coat the chicken.
  5. Serve the chicken over rice with the sauce. Top with fresh basil.
