Description
This recipe uses a 3-pound roast beef cooked in an Instant Pot along with chopped red bell pepper, zesty Italian dressing mix, butter, pepperoncini peppers with juice, and beef broth. The high-pressure cooking for 70 minutes with a natural release allows the meat to become tender enough to shred easily and soak in the flavorful cooking juices.
The shredded beef is placed on hoagie rolls that are briefly broiled for a toasted, crisp base. Slices of provolone cheese are layered over the meat and the sandwich is broiled a final time to melt the cheese. Ingredients
- 3 lb roast beef
- 1 red bell pepper chopped
- 1 Italian dressing mix zesty seasoning packet
- 16 oz Pepperoncini peppers reserve some of the peppers for toppings, in jar
- 1/2 Cup butter
- 8 oz provolone cheese sliced, package
- 12 hoagie roll
- 1 cup beef broth
Instructions
- Place the roast, red bell pepper, Zesty Italian Seasoning Mix, Butter and Pepperoncini Peppers (including juice) and the beef broth in the instant pot.
- Seal the instant pot by placing the valve on the top to the seal position.
- Cook on high pressure for 70 minutes with a 15 minute natural and then release the remaining pressure on the instant pot.
- Shred the beef and mix it into the juices in the instant pot.
- Slice the hoagie rolls and place them face up on a baking sheet. Broil the rolls on high for 3-4 until the bread is browned slight. Place the meat mixture on the bottom of the rolls, then layer on the sliced cheese, then broil for 1-2 minutes until the cheese is melted. Place the top of the roll on top.
