Instant Pot Kale

This Instant Pot Kale recipe features tender steamed kale combined with smoked sausage or bacon, onions, and garlic for a hearty, flavorful side or main dish. The use of chicken stock and sautéed aromatics creates a savory background that complements the smoky meat. Cooking kale in the Instant Pot softens the greens quickly while preserving their vibrant color and nutrients.

Description

Instant Pot Kale integrates chopped kale with smoked sausage or bacon, sautéed onions, garlic, and chicken stock for a rich, savory dish. After sautéing the meat and aromatics in the pot, the kale is added and pressure-cooked until tender. This method produces kale that is soft without being mushy, absorbing the smoky and savory flavors from the sausage or bacon and the subtle seasoning of garlic and onions.

The olive oil is used for sautéing sausage and onion unless bacon is the meat choice, since bacon renders fat. The pressure cooking shortens the cooking time and intensifies the melded flavors. Deglazing the pot with chicken stock after sautéing prevents burning and adds moisture to the dish. The dish can be seasoned with salt and pepper to taste.

Served as a side or a main with protein, this kale recipe offers a smoky and garlicky flavor profile with the hearty texture from the meat and the soft but not overly limp kale leaves. The use of an Instant Pot simplifies preparation and reduces stovetop time, making the dish practical for busy cooks looking for a vegetable-rich meal component.

Vegetarian or vegan versions can substitute vegetable stock and omit the meat. Quick release of pressure preserves kale texture. The kale stems can be removed or retained based on texture preference.
