Instant Pot Kale
Description
Instant Pot Kale integrates chopped kale with smoked sausage or bacon, sautéed onions, garlic, and chicken stock for a rich, savory dish. After sautéing the meat and aromatics in the pot, the kale is added and pressure-cooked until tender. This method produces kale that is soft without being mushy, absorbing the smoky and savory flavors from the sausage or bacon and the subtle seasoning of garlic and onions.
The olive oil is used for sautéing sausage and onion unless bacon is the meat choice, since bacon renders fat. The pressure cooking shortens the cooking time and intensifies the melded flavors. Deglazing the pot with chicken stock after sautéing prevents burning and adds moisture to the dish. The dish can be seasoned with salt and pepper to taste.
Served as a side or a main with protein, this kale recipe offers a smoky and garlicky flavor profile with the hearty texture from the meat and the soft but not overly limp kale leaves. The use of an Instant Pot simplifies preparation and reduces stovetop time, making the dish practical for busy cooks looking for a vegetable-rich meal component.
Vegetarian or vegan versions can substitute vegetable stock and omit the meat. Quick release of pressure preserves kale texture. The kale stems can be removed or retained based on texture preference.
Ingredients
- ~1 pound (400g - 454g) kale , cut into thirds and remove the stems if desired
- ~1 pound (380g) smoked sausage sliced, aka Kielbasa, or bacon
- 1 (123g) onion sliced, small
- 6 (16g) garlic minced, cloves
- 1 tablespoon (15ml) olive oil
- ¾ cup (188ml) chicken stock can substitute with vegetable stock, unsalted
- salt optional
Instructions
- Prepare Ingredients: Cut kale into thirds, and remove the stems if you like. If you're using bacon, cut them into bite-size pieces.
- Saute Sausages or Bacon: Press "Saute" button to "Sauté More" function to heat up Instant Pot. Wait until it says "HOT" on the screen (roughly 8 minutes). If you're using sausage, add 1 tbsp (15ml) olive oil in Instant Pot's inner pot. Make sure you cover the whole bottom with oil. *Bacon Tip: If you're using bacon, you don't need the olive oil. Add ~1lb sliced sausages in Instant Pot, then saute for 4 minutes.
- Saute Onions & Spices: Add onion slices in Instant Pot, then saute for 2 to 3 minutes. Add in minced garlic, then saute for 30 seconds.
- Deglaze Instant Pot: Pour in ¾ cup (188ml) unsalted chicken stock, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot.
- Pressure Cook Kale: Add 1lb kale in Instant Pot. With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position.Kale with a bit of Chew: Pressure Cook at High Pressure for 2 minutes, then immediately Quick ReleaseTender Kale: Pressure Cook at High Pressure for 4 minutes, then immediately Quick ReleaseWhen the Floating Valve drops, open the lid carefully.
- Season and Serve: Press “Cancel” button to turn off the heat. Give everything a quick mix. Taste the kale and add more salt if necessary. *Note: The amount of salt you need to add to properly season the dish depends on your sausage or bacon. For reference, we added a small pinch of salt to properly season our kale. Enjoy~
Notes
- Quick release pressure carefully to avoid overcooking the kale.
- Omit smoked sausage or bacon and replace chicken stock with vegetable stock for a vegetarian or vegan option.
