Description

Instant Pot LA Galbi features thinly sliced flanken-style beef short ribs marinated in a richly flavored sauce made from grated Asian pear, garlic, onion, ginger, soy sauce, honey, brown sugar, rice vinegar, and sesame oil. The pear paste helps tenderize the meat while adding natural sweetness. Marinated for several hours in the refrigerator, the ribs absorb these complex flavors.

Pressure cooking in the Instant Pot quickly softens the ribs to a tender texture. After pressure cooking, some prefer to finish the ribs under a broiler or air fryer to create a caramelized, slightly charred exterior reminiscent of grilled Korean BBQ.

The plated dish is traditionally garnished with sliced green onions, enoki mushrooms, raw white onion slices, and toasted sesame seeds, adding texture and freshness. This dish can be served as a main protein with steamed rice and side dishes.

For those without a food processor, the pear can be grated manually and other ingredients finely minced. If skipping the broiling step, serve the ribs with the cooking sauce as a flavorful complement. The recipe is designed to feed multiple people and offers options for broiler or air fryer finish.

Kalbi Marinade

  • 1 (550g) Asian pear , peeled & finely grated
  • 1 (37g) garlic minced, whole
  • 1 (130g) onion minced, small
  • 1 teaspoon (2g) ginger , minced
  • 1 teaspoon (2.3g) black pepper freshly ground
  • ½ cup (125ml) soy sauce regular
  • 2 tablespoons (42g) honey
  • 2 tablespoons (25g) brown sugar
  • 2 tablespoons (30ml) rice vinegar unseasoned
  • 2 tablespoons (30ml) sesame oil

Garnish

  • 1-2 talks green onions , finely sliced
  • enoki mushrooms
  • onion white, sliced, raw
  • sesame seeds toasted

Instructions

  1. Make Pear Paste: Cut onion and Asian pear into smaller pieces. Process chopped onion, garlic, chopped Asian pear, 1 tsp (2g) ginger in a food processor to a fine paste.
  2. Marinate Short Ribs: You can marinate the flanken-style short ribs in Instant Pot's inner pot or a ziploc bag. Make Marinade for Kalbi: In Instant Pot, add ½ cup (125ml) regular soy sauce, 2 tbsp (30ml) sesame oil, 2 tbsp (25g) brown sugar, 2 tbsp (30ml) unseasoned rice vinegar, 2 tbsp (42g) honey, and 1 tsp (2.3g) freshly ground black pepper. Give it a quick mix, then mix in the pear paste. Place 2.5 - 3lb short ribs into the marinade, and marinate for 2 - 8 hours in the fridge.
  3. Pressure Cook LA Galbi: When ready to cook, give it a quick mix to ensure the short ribs are not sticking to each other. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 1 minute + 5 minutes Nature Release. Open the lid carefully.
  4. Optional - Broil LA Galbi: You can use an oven or Instant Pot Duo Crisp’s "Air Fry" function for this optional step. Place the air fryer basket in a clean inner pot, layer the short ribs on top, then sprinkle with sesame seeds. You can also layer enoki mushrooms in the basket. Place the air fryer lid on Instant Pot. Press "Air Fry" button, set the temperature to 400°F and cooking time to 8 minutes. *Pro Tip: You can open the lid to check the progress. (Top Rack: takes ~4 - 5 mins + preheat time; Middle Rack: takes ~6 - 7 mins + preheat time). *Oven Option: Layer the LA Galbi on a baking sheet, then put them under the broil function for a few minutes.
  5. Serve LA Galbi: Layer LA Galbi on top of sliced raw white onions, then sprinkle with sliced green onions, toasted sesame seeds, and enoki mushrooms on top. Enjoy~ :)

Notes

  • Flanken-style short ribs are thinly sliced across the bone with several small bones and attached meat, ideal for quick pressure cooking.
  • If no food processor is available, grate the Asian pear and mince the other marinade ingredients separately for similar results.
  • Serve the cooked LA Galbi with garnishes such as sliced green onions and toasted sesame seeds to enhance flavor and presentation.
  • For a traditional finish, broil or air fry the ribs after pressure cooking to develop a caramelized crust, but serving immediately without this step is also possible.
