Instant Pot Lava Cake produces individual chocolate cakes with a molten center by cooking batter-packed ramekins under pressure. Rich dark chocolate and butter combine with eggs, sugar, and vanilla to form a smooth batter. The cakes steam in the Instant Pot, emerging tender with a soft, gooey middle. Optional garnishes like mint or raspberries add fresh contrast to the warm chocolate.

Description

The recipe starts by melting dark chocolate chips and butter together until smooth, creating the rich base of the cake. Eggs, sugar, flour, and vanilla are whisked separately then combined with the chocolate mixture to create a velvety batter. The batter is portioned into greased ramekins and placed on the Instant Pot’s steam rack with water below for pressure cooking.

After cooking on high pressure for 8 minutes and a quick release, the cakes reveal a tender structure with a flowing, molten center typical of lava cakes. The steaming method produces moist and even cooking without drying the edges. Serving suggestions include vanilla ice cream and optional fresh mint or raspberries, which provide freshness and slight acidity to balance the sweetness of the chocolate.

  • 1 cup dark chocolate chips
  • ½ cup butter
  • 3 large egg
  • ½ cup sugar
  • ¼ cup flour
  • 1 teaspoon vanilla
  • mint optional, leaves
  • raspberry optional

Instructions

  1. Place chocolate chips and butter in a microwave-safe bowl. Microwave for 30 seconds, remove from microwave, and stir.
  2. Place back in the microwave for another 30 seconds and stir until smooth.
  3. In a separate bowl, whisk eggs, sugar, flour, and vanilla together until smooth.
  4. Pour the chocolate mixture into the egg mixture and stir well to combine.
  5. Spray four 6-7-ounce ramekins with cooking spray. Fill each ramekin 2/3 of the way full with batter. Put the steam rack in the bottom of the Instant Pot and add 1 cup of water. Place ramekins on the steam rack, placing 3 of the ramekins directly on the rack and one over the top and in the center of the 3 ramekins (as seen in the photo above). 
  6. Place lid on Instant Pot and place tab to "sealing". Manually set the time to 8 minutes on "high" pressure (see notes above for consistency times). Quickly release the pressure and carefully remove ramekins from the Instant Pot.Serve with ice cream and add mint leaves and raspberries for garnish.
