Instant Pot Mashed Potatoes

Report
Instant Pot Mashed Potatoes use Maris Piper or King Edwards for their creamy texture, cooked quickly under pressure with water and salt. Milk, butter, and fresh chives enrich the potatoes, which are mashed smooth and adjusted to texture with additional milk if needed. This method simplifies classic mashed potatoes for efficient preparation with fresh herb notes.

Description

This recipe for Instant Pot Mashed Potatoes begins with peeling and chopping 1 kilogram of Maris Piper or King Edwards potatoes, known for their starchy qualities that yield fluffy mashes. The potatoes are cooked in the Instant Pot on high pressure with salted water and a metal trivet to keep them above the water, ensuring even cooking and preventing sogginess.

After pressure cooking for 10 minutes, the cooking liquid is discarded, and the potatoes are combined with whole milk, unsalted butter, and freshly chopped chives for herbal brightness. Mashing continues until smooth, with extra milk added as needed to achieve the desired creamy consistency.

This mashed potato provides a smooth, buttery side dish with green onion flavor enhancing the mild potato base. It's suitable for serving alongside a range of main dishes and can be easily customized with additional ingredients or spices based on preference.

The option exists to keep skins on for added fiber or add items like cream cheese, cooked bacon, herbs, or even vegetables such as cauliflower for variation.

Ingredients

Servings
  • 1 kg potato (Maris Piper or King Edwards are best)
  • 180 ml water
  • 180 ml milk whole
  • 85 g butter unsalted
  • 15 g chive finely chopped, fresh
  • 1 teaspoon salt sea salt

Instructions

  1. Put 180 ml Water and 1 teaspoon Sea salt into the Instant Pot. Place the metal trivet in the pot. Add 1 kg Potato (chopped) on top of the trivet.
  2. Select the Pressure Cook setting and set the pressure to high. Set the timer to 10 minutes. When finished cooking, quick release the pressure.
  3. Remove the potatoes and trivet and drain all the liquid. Return the potatoes to the pot. Add 180 ml Whole milk, 85 g Butter and 15 g Fresh chives.
  4. Mash the potatoes with a potato masher until they are smooth. If the potatoes are too thick, add a little more milk until the desired texture is achieved.

Notes

  • Keeping the potato skins on adds fiber and texture to the mash.
  • Mix in cream cheese at the end for extra creaminess and flavor variations.
  • Fresh herbs like chives or parsley add brightness, while woody herbs such as thyme or rosemary give a deeper aroma.
  • Use olive oil instead of butter for a dairy-free, vegan mash with a smooth texture.
  • Add cooked cauliflower to potatoes when mashing for a lighter, vegetable-enriched dish.
  • Include cheese and cooked bacon pieces for richer comfort food.
  • For a spicy twist, stir in chipotle paste or horseradish to color and flavor the mash.
  • Incorporate pesto for a fresh herbal accent.
  • Mix in cooked chorizo for a smoky Spanish flavor.
