Description

The recipe begins by combining mixed berries, sugar, and lemon juice in an Instant Pot, where the sugar draws out berry juices during a short soak. After sealing the pot, the berries cook under high pressure briefly, then naturally release pressure to maintain texture and flavor. Mashing or blending the cooked mixture achieves the desired jam consistency.

A slurry of cornstarch and water is added to thicken the jam, and the mixture is boiled using the sauté function until it reaches a gel consistency. This step ensures the jam is thick enough to hold its shape when cooled but remains spreadable. The lemon juice adds brightness and helps with preservation.

Once prepared, the jam is poured into containers and refrigerated, staying fresh for up to three weeks.   • 32 oz mixed berries I used 2 16 oz. bags, but can also use 2 lbs fresh fruit, frozen
  • 1 cup sugar
  • 2 tablespoon lemon juice
  • 3 tablespoon cornstarch
  • 1 1/2 tablespoon water

Instructions

  1. Add the mixed berries, sugar, and lemon juice to your Instant Pot.
  2. Allow to sit for 10 minutes. The sugar draws out the juices from the berries.
  3. Place lid on Instant Pot and make sure valve is in sealing position.
  4. Cook manual, high pressure, for 1 minute followed by a natural pressure release for 15 minutes.
  5. Do a quick release if any pressure remains and once pin drops, remove lid.
  6. Use a potato masher or immersion blender to smooth out the jam to desired texture.
  7. In a small bowl, combine the water and cornstarch to create a slurry.
  8. Stir cornstarch slurry into the fruit mixture.
  9. Turn the saute feature on and bring mixture to a full boil. 
  10. Allow to boil for a few minutes, stirring frequently, until mixture thickens.
  11. Turn off saute function and pour jam into containers. 
  12. Store in refrigerator for up to 3 weeks!
