Description

In this recipe, flank steak is sliced into strips and combined with a sauce made from soy sauce, brown sugar, water, fresh ginger, and minced garlic. The mixture is cooked under high pressure in an Instant Pot for 8 minutes, then naturally released for 10 minutes, which tenderizes the beef and infuses it with the sauce. Shredded carrot is added to contribute mild sweetness and texture during cooking.

After pressure cooking, the sauce is thickened by stirring in a cornstarch slurry and boiling briefly using the sauté function. This creates a glossy, clingy sauce coating each piece of beef. The dish is garnished with sliced green onions for freshness and visual contrast.

Ingredients

  • 1 1/2 lbs flank steak
  • 3/4 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup water
  • 1/2 teaspoon ginger minced, fresh
  • 1 garlic minced, clove
  • 1 carrot shredded
  • 1 tablespoon olive oil
  • 1 green onion sliced (garnish)

To thicken sauce

  • 3 tablespoons cornstarch
  • 3 tablespoons water

Instructions

  1. Slice flank steak into strips
  2. In a bowl, combine soy sauce, water, oil, sugar, ginger, and garlic 
  3. Pour sauce in the instant pot 
  4. Add beef strips and shredded carrot. Mix until the beef is coated in the sauce 
  5. Cook on high pressure for 8 minutes (8 minutes MANUAL)
  6. After 8 minutes, let the Mongolian beef cool inside the pot for 10 minutes before releasing the pressure (10 Min Natural Pressure Release, NPR)
  7. In a small bowl, combine the water and the cornstarch until there are no lumps
  8. Turn the SAUTE button on your Instant Pot and pour in the cornstarch mixture. Let the sauce boil until it thickens. 1-2 minutes 
  9. Pour the beef into a platter and garnish with green onions. Enjoy!
