Instant Pot Pilau Rice
Description
Starting with diced white onion sautéed in olive oil in the Instant Pot, garlic and ginger purees are added to deepen flavor. Brown rice is rinsed and added to the cooker with vegetable stock, along with a mix of coriander, cumin, turmeric, tandoori curry powder, salt, and pepper to create a balanced pilau seasoning. Frozen peas contribute color and mild sweetness.
The mixture is pressure cooked for 18 minutes, followed by a natural pressure release, allowing the rice to absorb spices fully and attain a tender, fluffy texture. Fluffing the rice before serving separates grains for a suitable pilau consistency that complements a variety of dishes.
This method simplifies pilau preparation while maintaining authentic spice combinations. Adjustments can be made by varying the quantity of spices to taste or substituting grated ginger and garlic if preferred. Using high-quality vegetable stock enhances the dish's richness and depth.

Instant Pot Pilau Rice Recipe Ingredients:
- 1 Cups brown rice
- 1.25 Cups vegetable stock
- 1 Tsp Garlic puree
- 1 Tsp ginger puree
- 1 onion small, white
- 1 Cup peas frozen
- 2 Tsp extra virgin olive oil
- 1 Tbsp Coriander
- 1 Tsp cumin
- 1 Tbsp Turmeric
- 1 Tsp tandoori curry powder
- salt
- black pepper
Instructions
- Peel and thinly dice your onion and load it into the instant pot pressure cooker. Click sauté and add a little extra virgin olive oil. As it heats up peel and grate your ginger and garlic. Sauté your onion for 2-3 minutes or until the onion starts to change colour. Cancel sauté. Add in ginger and garlic and stir for a couple of minutes.
- Rinse and pour in your brown rice.
- Add in your stock.
- Add in everything else, stir and place the lid on the instant pot.
- Set the valve to sealing and the cook time to 18 minutes on manual pressure cook.
- After 18 minutes cook time allow for 5 minutes natural pressure release and then remove any excess pressure.
- Fluff up the pilau rice with a fork and serve.
Notes
- Grated ginger and garlic can be used alternatively to purees if preferred.
- Using quality bone broth-based stocks in the Instant Pot adds healthier flavor depth and improves taste.
- Spice amounts can be adjusted to increase heat or aroma according to preference.
