Instant Pot Pork Chops

Instant Pot Pork Chops are marinated boneless pork chops coated in a blend of honey, sweet chili sauce, soy sauce, ketchup, and garlic. After an 8-hour marinade, the chops are seared for a caramelized exterior, then pressure cooked with chicken stock for tenderness. The reserved marinade is boiled into a glaze for serving.

Description

This recipe begins by combining honey, sweet chili sauce, soy sauce, ketchup, minced garlic, and vegetable oil to create a flavorful marinade. Boneless pork chops soak in this mixture for 8 hours to absorb the sweet and savory flavors. After marinating, the chops are seasoned with salt and pepper, then seared on each side in the Instant Pot using the sauté function to build a golden crust and lock in juices.

Once seared, chicken stock is poured over the chops in the pot. The Instant Pot lid is sealed, and the pork chops are pressure cooked under high pressure for 7 minutes, resulting in tender meat. Meanwhile, the reserved marinade is boiled separately to develop a honey garlic glaze of thicker consistency, which enhances the final dish.

The combination of marinating, searing, pressure cooking, and glazing creates pork chops with balanced sweetness, a tender interior, and a flavorful finishing sauce. This method simplifies cooking while preserving moisture and flavor.

Ingredients

Servings
  • 4 pork chops boneless
  • ¼ cup honey
  • ¼ cup sweet chili sauce
  • ¼ cup soy sauce
  • ¼ cup ketchup
  • 4 garlic minced, cloves
  • ¼ cup vegetable oil
  • 2 tablespoons butter
  • salt
  • black pepper
  • ½ cup chicken stock

Instructions

  1. In a large ziploc bag add honey, chili sauce, soy sauce, ketchup, garlic cloves, and vegetable oil and mix to combine.
  2. Add your boneless pork chops to the bag with honey garlic sauce and place in the refrigerator to marinate for 8 hours.
  3. When you're ready to cook up the pork chops, turn your Instant Pot on saute and add butter.
  4. Remove the pork chops from the marinade (set aside the marinade), and season each side with salt and pepper.
  5. Place pork chops in the Instant Pot and sear each side, about 4 minutes per side.
  6. Turn the Instant Pot off and cover the pork chops in chicken stock.
  7. Add the lid, move the valve to sealing, and set your Instant Pot or pressure cooker on Manual (high pressure) for 7 minutes.
  8. While the pork chops are cooking in the Instant Pot, pour the leftover marinade into a saucepan and bring it to a boil. Once boiling, remove from heat and let cool for a honey garlic glaze.
  9. Let the Instant Pot come to pressure and once the timer is done, let it naturally release for 10 minutes. If there is still pressure at that point, you can quick release the rest.
  10. Remove pork chops from the cooker and serve warm over rice or mashed potatoes. Pour honey garlic sauce over the pork chops or serve it in a bowl on the side.
