Ingredients
- 2 Medium thickness pork chops bone-in
- salt
- pepper
- 1 tbsp vegetable oil
- 250 ml (1 cup) liquid (water, stock)
- 2 tbsp of your favourite paste/sauce/dressing – I used harissa paste but you can use ranch, BBQ, chilli, etc etc
Instructions
- Season the pork chops with salt and pepper on both sides
- Select the sauté setting of the Instant Pot, add in the oil and when hot brown the pork chops on both sides (about 45 secs on either side).
- Remove the pork chops from the Instant Pot, and set aside on a plate.
- Add the liquid into the Instant Pot, and scrape any bits stuck to the bottom of the pot from frying with a silicon or wooden spoon.
- Place the trivet inside before adding the pork chops on top of the trivet.
- Then add your favourite sauce to the top of your pork chops
- Cover your Instant Pot, set the vent to 'SEALING', select the manual or pressure cook button (dependent upon IP model), select high pressure and set the timer to 5 mins.
- Cook till done then let the steam release naturally 10 mins before QPR (if necessary) and opening.
- Remember to always check the internal temperature of your meat using a Meat thermometer before eating.
Notes
- For thicker pork chops, increase the cook time by a few mins. If your pork chops aren’t cooked thoroughly, put them back in the Instant Pot for another 1 or 2 mins and check again.
- If you prefer, do a simple dressing of garlic salt, mixed herbs, paprika and olive oil for the paste/sauce/dressing.
- The carb count will be lower if you use a low-carb paste/sauce/dressing.
- The total cook time does not include the time it takes for the Instant Pot to get to pressure and the time for the natural pressure release. Plan for additional time.
